Ingredients:
- 1 1/2c cooked and cooled Quinoa
- 1 1/2c shredded cheddar cheese
- 1 1/2c chopped vegetables (steamed, roasted, etc)
- 1/2 tsp salt
- 2 eggs
- Preheat your oven to 350 degrees and spray a muffin pan with cooking spray
- Add all ingredients into a large mixing bowl and mix well
- Divide evenly into the pan and press down to pack in firmly
- Bake for 15-20 minutes until brown and crispy
For some reason I can not get this picture to flip. Anyways I just used a steamable bag of vegetables and this steamable bag of Quinoa, both from Target. The Quinoa was the whole bag and the veggies I just measured out. Also, I got a seasoned flavored of Quinoa, but you can always do plain or whatever flavor you want!
It does look a bit gross in the making..

Not so sure, but she did eat them. Like I said before, they had a great flavor and I actually ate a few myself. Hope this helps some other veggie fighting toddlers! Enjoy! :)
