Easy Breakfast Casserole

I hope everyone had a great Christmas and got to spend lots of time with family and eat way too much. Speaking of eating, I wanted to share this super easy, super delicious breakfast casserole we had Christmas morning.  I have made this before awhile ago, but forgot how tasty it was.  It's something you can make any day of the year and also change up the ingredients to your liking. I loved that I could basically make the whole thing the night before and just pop in the oven when we woke up Christmas morning!

Ingredients:
12 eggs
1/2 cup of milk
1 lb breakfast sausage
8oz cream cheese
2 cans (8oz size) of crescent rolls
2 cups of shredded cheese

Directions:
(I prepped the night before, so I did everything up until putting it in the oven and instead stuck it in the fridge)

1. Preheat your oven to 375'
2. Beat eggs and milk together and scramble.  Set aside.
3. Brown sausage and drain grease.  Once cooked, mix together with cream cheese.
4. In an ungreased 9x13 pan, unroll one set of crescent rolls. Spread sausage mix on top as first layer, then eggs, and cheese. Last, unroll remaining can of rolls.
5. Bake 25 minutes

I honestly didn't measure the cheese and just sprinkled it on the eggs until they were covered.  I also ended up cooking quite a bit longer than 25 minutes, which is probably from having it chill overnight.  I think I ended up cooking it close to 40 or so minutes.  You just want to keep checking and take it out once the rolls turn nice and brown, as everything in the middle is already cooked.

This was delicious fresh, and also heated up as leftovers for days after!

Enjoy! :)

Tilly - 18 Months

18 Months

It seems like you have been in our lives forever, but I also just can't believe my sweet little "baby" is already a year and a half! Time really does fly.  You my little lady are so full of energy and personality! You keep my days interesting, that's for sure.. and are sassy with a capital S.  You love to put your hands on your hips and prance around. Who knows where that comes from... haha!

I have to throw in that FINALLY around 14/15 months you gave in and let me do your hair! Around the time it actually got long enough to work with, you accepted the bows. Yay! I'm not really into the turbo bigger than your head bow look, so we stick with the smaller bows. I also throw in the occasional crazy pig tails on the top of your head (where the hair is long enough- ha!).

We had your 18 month check up this morning and everything went perfect.  You are still our tiniest little peanut and weighed in at 19.1lbs.  You now are under the 1% coming in at 0.6% ha! But you grew another inch and are now 31 1/2in which kept your height at 50%. You seem to just love to grow up, and not out.  No worries over your size as you eat TONS and are one of the most active babies around. The doc says everything is moving along normal for you and you are just lucky to have a fast metabolism.  You are starting to grow into most 18 month clothes, even though some still swallow you up. Why cant they make sizes consistent?! sheesh!

Some highlights from the past 3 months since your 15 month update:

You now have 12 teeth.  All of the front 8 and your first set of the 4 molars. Knock on wood, but teething this go around has gone pretty smooth. By far the worst was the 2 week terror when your top 4 came in at once.  The molars have actually gone pretty well.  You can tell they bother you on some days as you are constantly chewing on something and shoving your hand back there.  You did have one weekend with a mild fever that I am pretty sure came up when that last molar popped out. Other than that you have been our little champ.  I did hear those "eye" teeth can be horrible, but fingers crossed they don't cause you too much pain.

Your vocabulary is picking up daily and you are learning more and more words.  Right now your favorites to say are yellow, two (as you hold up 3 fingers lol), eat, and mommy hey! You say those  alllllllllllllll day long.  You say tons of words and have around 3-5 phrases. The doctor said your vocabulary seems to be above average and a little ahead for your age. You also have a ton of gibberish that you get really into! You are really good at repeating us and definitely are picking things up quickly now each and every day.

You have learned most body parts and as of now can point out: head, hair, eye, nose, mouth, teeth, ear, belly, knees, toes, feet, peepee, booty, and beard (on daddy).  You can say just a few of them.  You also now yell out "EW" every time you poop and sometimes when you pee.  If we asked if you pooped, you start screaming ew and run in circles.  It's so funny! And every time I change your diaper you switch from "ew" to "cooooold" during the whole process.

You do great with understanding what we are saying. Things like asking if you want to go outside where you'll run to the door and grab your shoes trying to put them on. Or when we ask if you want to go night night, you'll come give me a kiss and run back to your room to wait on daddy.  You also know most of your toys and if we ask you to go get them, you know what to go grab.  It's so amazing to see you learn so much and how you soak in everything around you.

Really you are the happiest little thing and love when we go out shopping so you can interact with everyone. Every time we go to the store you spend your time saying hey while waving and blowing kisses at everyone. You still are iffy if men try to actually hold you, but from a safe distance everyone is your best friend.  I don't think I have ever gone to a store with you where at least 5 people don't stop us to come up and see you. This makes shopping go pretty smooth since I can take my time while the other customers are your distraction! haha You are just such a ham and eat up all the attention!!

We had a busy last few months with traveling and holidays.  You made a few trips to VA to see daddy's family and luckily did very well on the 6 hour car drive.. thank goodness. We also made our trip back to MS to celebrate Thanksgiving. Of course you had your second Halloween before that, and now are about to celebrate Christmas #2! You had your 3rd cold ever this past month and sadly it turned into a sinus infection that required your second sick doctor visit (the first was your virus at 1 year) and got your first prescription of antibiotics.  I will say you are a tough cookie and never let it drag you down.  The only reason we took you in is because of how long it lasted and because it moved down into your chest.  Only the first 2 nights where you were super snotty and had a nasty runny nose did you wake up and not want to sleep alone.  Of course you ALWAYS give your sickness to me so since I was knocked out on Nyquil in our bed, Daddy made a pallet on the floor and slept with you in your room.

Speaking of sleep, you are still a rockstar here and I am SO thankful for that! We are starting to move your bedtime back from 6:30 to 7 and a typical night is 7-7/7:30. You nap most days 11-2, but sometimes wake up around 1. You  have always been my little schedule baby and that makes your OCD mama so happy. I hear a schedule is definitely a challenge once you have baby #2, so I am enjoying it while I can.  And no, no plans of baby #2 yet.  Trust me.. when WE are ready, it will happen.  I have always said I think you sleep so good and hard because you are NON STOP every second you are awake. You are moving and grooving, running and jumping, dancing and twirling 24/7.

Things you LOVE:
Eating.. oh my gosh. I hear EAT! EAT! all day long. Daddy gave you some ketchup one day for lunch and you now would probably eat a straight bowl of ketchup if I let you!
Being outside. You loooove it outside. We normally spend an hour or so each day walking around our property and I just follow you as you pick up rocks and sticks and explore.
Dancing and shaking your booty.  You still have zero interest in TV, but if we turn it on the music channel or turn the radio on.. you can get down!
Climbing! You can climb up the slide in your gym class all by yourself now. You go up the top, climb over and slide down like such a big girl.  This also means you can climb on the couch now, though I do stop that as much as possible.  The back of the couch is where I "hide" my phone, remote, and drink during the day. You are about to take over the one safe place! haha
Also- Our cell phones/tablets and remotes (which you aren't allowed to play with and make your mission to get), running, laughing, playing with mommy and daddy, coloring for about 2 minutes, playing with friends, bath time, books, baby dolls, doggies, leaves, rocks, sticks, your Romp N Roll gym classes, balls, putting on mommy or daddy's shoes and walking around, putting on daddy's hats, when daddy gets home from work, spinning in circles making yourself dizzy, and of course your elephant that is still your sleeping buddy must.

Things you aren't so found of:
When daddy tells you no. Girl, you have got this pout DOWN.  You pretty much act like your world has been destroyed and get the MOST pitiful quivering lip I  have ever seen. Your eyes fill with tears and you look at him.. and bam! He jumps up and is hugging you telling you he's sorry and how much he loves you. It's hilarious, and yet so bad. You know what you're doing there little lady.  Luckily with mommy you just give me a mean look and stop whatever you're doing because you know I don't have time for that nonsense all day long.. mean mommy!
You aren't a big fan of most vegetables so we are still working on squeezing those in when we can.
Oh, and Santa.. you are not feeling the big guy this year!

Happy before we left the house.. then not so much!

Overall you are still our little ball of joy and keep us smiling and laughing daily.  Even though some days you can drive me crazy, I couldn't imagine my life any other way than staying home with you and being a stay at home mommy.  It is the best job I have ever had and I am probably way too attached to you.  But that's ok! :)  We love you to pieces and can't wait to see you continue to grow and learn as the months roll along!

Happy 18 months Ms. Sassy pants!

Thanksgiving 2015 + Aldi Finds

Whew, we had such a whirlwind of a week last week and were able to cram in so much in our visit back home to Mississippi! Before I do a little holiday recap, I wanted to throw in some of my weekly Aldi finds! (especially since most are holiday finds)

I actually found this wine a few weeks ago and forgot to post, but since I saw it still there today I wanted to share! It's a dessert wine and is only $6.99! It is very sweet, so be prepared. To me it's like a delicious coffee/chocolate milk/wine mix.

I don't know about yall, but I am obsessed with the white chocolate peppermint pretzels.  BUT I don't love the price tag of the popular Pretzel Crisps brand that is $3.99 for only 4oz.  So let's just say I was jumping for joy when I saw the Aldi version for only $1.99 for 7oz! What?!? I snatched up 2 bags and will likely go back for more ASAP!  Next, these Greek Yogurt caramel corn bites are DELICIOUS! I got these a few weeks ago as well and was so excited I saw them again today.  They are only $2.69 and a pretty big bag.  I actually only ran in for a few items today so I did hold back on all the delicious holiday treats I saw.  I'm sure I'll be getting quite a few goodies next week!
And lastly, I grabbed these cute Christmas quart bags for only $1.99! I love their Boulder brand baggies and thought these would be nice for the holidays!

I love seafood, and Aldi always has the best deal on their frozen selection. I quickly grabbed a bag of these scallops when I saw them in the special buy section for only $4.99.

Now on to the Thanksgiving fun and picture overload!!

We decided to fly to MS to be with my family for the week of Thanksgiving since Lance had the week off work and we have only been back once this year.  We knew we needed to fly as much as possible before Tilly is 2 since she is free in our lap.  I was pretty nervous this time since she is a VERY active toddler.  We have flown twice with her before, at 5 months and 9 months, and she literally slept the whole flight there and back. Well.. this time was a different story.  On the way to Memphis she was very much awake and we spent the hour and 15 min flight picking her up and down, shoving a million goldfish at her, and trying to distract her with the iPad. Thankfully that all managed to keep her pretty happy even though it was exhausting for us.  Now the way home was a bit of a different story.  She is currently getting 4 molars in and while that is going shockingly well, you can tell they are bugging her and making her overly grumpy when she is sleepy.  She woke up a bit early the morning of our flight home, so by the time we got to the airport she was super sleepy.  She decided to have her first ever temper tantrum (I'm talking scream throw yourself on the ground tantrum) right as the flight was boarding.  The other passengers looked thrilled we were getting on with this raging toddler! ha  Lance looked at me like, Um what do we do? We just snatched her up and carried her on.. I mean what else do you do?!? Luckily once we got on she calmed down as we let her shred our boarding passes. As soon as we took off she was so pitiful chewing on her hand as she was so exhausted. Thank goodness I got her to sleep on me and she slept almost the whole way back to Charlotte, whew! Our plan was to fly one more time in the spring before her birthday, but we are both a bit scarred from that lovely tantrum! ah

Once we arrived Monday morning, we went back to my Dad's and Tilly got to visit with her first set of great grandparents.  After lunch and a nap, we then headed over and visited her other set.  It was so nice for them to get to spend time with her since they hardly get to see her with the distance between us.  We ended out the day by stopping by my best friend Lexie's and visiting with her and her 3 boys. All of my friends had boys up until this May, and then Lauren had sweet Luella so there is one other girl in the bunch!

Tilly is obsessed with dogs and I knew she would be in doggie heaven with our 2 at Dad's.  While she loved them, she was mostly fascinated with our cat. Poor Romey got LOTS of attention! haha

Tuesday morning we woke up and made our way over to my other friend Amy's to visit with her and her 2 boys! It's so nice to squeeze in time to visit all my best girlfriends when we are home.  I miss these girls so much and even the little time we have is enough to keep our friendships going!  This day none of the kids were feeling the group photo! haha

After we visited for a few hours that morning, it was time to go home and get a good nap in before we went to take our family photos.  It was so funny trying to get Tilly to sit still and see just how much energy this girl has.  Every time we are around other kids her age it always amazes me to see how much more active she is. This girl NEVER stops.  Never.  I honestly can not pick a favorite of the pictures Lexie took, because they are all so great.  I'm so thankful she captures these moments for us when we come home!

After we wrapped up our session, we headed back to Dad's.  Time for some more visits! This night my brother and his girlfriend came by along with another best friend, Kristen.  Jason and Claire stayed at the house to sit while Tilly slept so Lance and I could go have dinner with Kristen.  It was nice to get out past dark and do something. Since Tilly is asleep by 6:30/7, we rarely leave the house past 5ish.

Wednesday morning we got to relax at home and just lounge around a few hours.  Once Tilly was up from her nap, we went back over to Lexie's and had a baby pow wow. All my girlfriends with our new babies met up and had a few hours to catch up.  We had Lexie with Canion, Harber, and Knox. Ashley with Jameson, Lauren with Luella, and little Ms Tilly.  It's so crazy how much things have changed the last few years.  From our crazy college nights out to now mommy get togethers.  I miss this group of girls so much and am so thankful we all keep in touch and so close.  We were only missing our NYC girl, Sarah!

Finally came Thanksgiving day and we had no plans except to stay at Dad's and eat eat eat!  Kristen came over that morning for one last visit as well.  It was a great day relaxing and spending time with all my family.  Of course my piglet child who never stops eating LOVED Thanksgiving. She pretty much ate all day and then stole Jason and Claire's desserts! haha

And that's a wrap! We were up bright and early for our not so fun flight home!

I do have to add in a little fun we had that weekend.  We got our tree Saturday morning and also visited Santa. As much as this might make me sound cruel, I think her picture this year is so hilarious.  Santa was not our friend! haha  She was all smiles before we left, and would only calm down there if I held her. Maybe better luck next year?!

Now time to enjoy all the Christmas fun!!!
